Krithi Cherupayar refers to the whole, unhulled mung bean (green gram). This pulse is a vital source of plant-based protein, vitamins, and dietary fiber. It is highly valued in South Indian, particularly Kerala, cuisine. It is commonly used after soaking to prepare sprouted salads, added to vegetable curries, or made into the staple dish Cherupayar Thoran (a dry curry with coconut). Due to its high nutritional content and easy digestibility, it is considered one of the healthiest pulses.
